Description: A refined expression of Swartland's terroir, this Chenin Blanc is crafted from a blend of eight single-vineyard sites, ranging from 1968 to 1986. The vineyards span diverse soils, including granite, shale, schist, clay, and iron, contributing to the wine's complexity. The grapes were whole-bunch pressed and naturally fermented, then matured for 11 months in neutral French oak barrels, with 9% fermented and aged in concrete vessels. The result is a wine with a pale golden hue and aromas of lemon curd, sweet thyme, white tea, and wet stone. On the palate, it is medium-bodied with a supple texture, fresh and bright acidity, and a soft, rounded profile. This elegant and balanced wine showcases the meticulous craftsmanship of David and Nadia Sadie. Ideal for pairing with Sushi and umami laden dishes.
